A dish for Roger Conant?

Back in 2018, Budleigh Salterton’s Fairlynch Museum marked the 400th anniversary of the death of Sir Walter Raleigh, born like Roger Conant in the little village of East Budleigh. Cookery writer and food designer Rukmini Iyer was commissioned to produce a special dish. What else could it be based on but potatoes? And so Pommes Raleigh was created. And now, as we approach the 400th anniversary of the city that he founded, it would be nice to see a dish being created to honour Roger Conant. Ideas please!  Click on the comment for the Pommes Raleigh recipe.
